Easy Samoa Cookies

It's Girl Scout Cookies season! But some of us (me) don't know how to control themselves, and wind up eating the whole pack in two days. It also doesn't help that those are my favorite girl scout cookies. If you're like me, you might love this healthier but SUPER DELICIOUS, 4 ingredients, batch of no bake Samoa cookies. It's guilt free, vegan, gluten free and so so so easy to make! I will take you step by step on how to make these delicious treats. 


1 cup pitted dates 

1 cup toasted shredded coconut 

1/3 cup semi sweet chocolate chips

1/2 tsp coconut oil

Place the dates and coconut in a processor and pulse until turned into a paste.

This step is not a must, but I personally like to use a cookie scooper to make the same size cookies. This batch makes around 12 cookies, but feel free to roll them into balls with your hands, then flatten them out into the cookie shape you like. 

For holes, I used a metal straw, but you can also use chopsticks or anything that can make a small hole in the middle of the cookie.

Melt your chocolate and coconut oil in the microwave for about 30-45 seconds then mix well - don't overheat your chocolate chips! 

Dip your cookie into the chocolate. Lay the cookie face down to allow the chocolate to harden first. You can allow the chocolate to harden at room temperature, but I prefer putting them in the freezer for about 5-7 minutes until the chocolate hardens.

Top off with more chocolate stripes and toasted coconut et voila!
