Tuna Quinoa Bowl for the Busy
The most useful tip I can give you in this recipe: pre make your quinoa! Quinoa takes around 15 minutes to make and it lasts in the fridge after being prepared, and it is SO simple it saves you so much time when you’re hungry or busy to just pop it in the microwave or eat it cold -like the recipe. Simply bring the 1 cup quinoa to 2 cups of water (or broth) to a boil – I also like to dress it with herbs, salt, pepper and whatever spices I’m in the mood for- and after it starts boiling, pop a lid on it and turn the stop top on low for about 10-12 minutes (check on quinoa to make sure it doesn’t get too dry). After the quinoa looks ready (fluffy and not crunchy) turn the heat off and let the quinoa sit for 5 minutes before serving (the steam will make sure all quinoa is ready to be consumed).
1 Tuna Can
1/2 Cup cooked quinoa (recipe up top)
3-4 cherry tomatoes
1/2- 1 medium sized cucumber (depends on your preference)
1/2 Lemon for Juicing
1 tbsp Olive Oil
Salt & Pepper to taste
